Cajun Eggplant Chips

Worried that doing raw with your child with autism will be
too hard? Scared that you won’t be able to do it? (I feel your
fear, because I was scared too. The water is fine, so come on in!)
Maybe you don’t have a child with autism, but would like a nice
snack just for you? Then you just HAVE to try these chips!

Easy Cajun Chips

1 Eggplant
3 Tablespoons olive oil
2 teaspoons Celtic sea salt
5 Tablespoons cajun seasoning

If your eggplant is organic, wash it, slice off the ends
and slice it into 1/4 inch slices. If it is not organic,
peel the eggplant first. Lay slices on mesh dehydrator
tray. Using a pastry brush, brush olive oil onto slices.
Sprinkle slices with sea salt and cajun seasoning.
Dehydrate until crisp & enjoy!

*Chefs Note: We like our chips extra spicy here at
our house, so we use quite a bit more cajun
seasoning than what is called for here. Let your
taste buds and your desire (or lack thereof) for
spice be your guide with this recipe.
